Right on the main square of Jemaa el-Fna, you can find the Cafe Du Grand Balcon by following the stairs up to the terrace. There you can enjoy the panoramic open air view of the markets and food stands while enjoying a cup of the traditional mint tea or a bite to eat while you escape the sun. The view is even better at night when the square becomes alive with people eating and selling their goods. From the terrace is also one of the best views of the Mosque de la Koutoubia, which is especially lovely at night. The drinks are a bit pricier compared to normal cafes in the area, but you can stay there as long as you like to take in the view and people watch.
