Edosoba Hosokawa is a long-running Ryogoku soba restaurant in Sumida, centered on juwari soba made from 100% buckwheat. The kitchen stores whole buckwheat at low temperature, mills only what it needs in-house, and serves freshly milled, freshly made and freshly boiled noodles. Its sourcing changes by season, with buckwheat brought in from regions including Ibaraki, Hokkaido and Shikoku.
The menu rewards a slower meal as well as a quick bowl of soba. Alongside the restaurant’s pure buckwheat noodles, diners may find seasonal offerings such as chilled oyster soba, sobagaki and tamagoyaki; the Michelin Guide also notes à la carte seafood and vegetable dishes, including conger eel prepared as tempura or simmered. Menu items and availability change, so checking the restaurant before a special trip is sensible.
Hosokawa is at 1-6-5 Kamezawa, roughly one minute on foot from Ryogoku Station’s Toei Oedo Line A3 exit and about six minutes from the JR Sobu Line east exit. It currently serves daytime hours until the soba sells out, with Mondays and Tuesdays closed; the official site says evening service is temporarily paused. The small, traditional setting does not take reservations, so guests sign in on arrival.
