This is a great place for customers who are vegetarians or are dieting. Koganeya emphasizes on healthy dining. They use mainly organic vegetables and homebred meat as ingredients. Motsu-nabe (もつ鍋) is one of their specialties. It is low-calorie and low-fat, rich in collagen as well as vitamins C and B.
The special soy sauce base used in the cooking of Motsu-nabe was passed on from the old branch in Hakataku. Three types of miso base are used as well in addition to the soy sauce base.
Other than Motsu-nabe, other pots served also emphasize on “good for health” and “good for skin,” such as Suppon-nabe (すっぽん鍋, good for women’s skin and health). Reservations can be made online or by phone. Group reservations are limited to 38 people.
